A great, but pretty technical, post about gluten intolerance from Chris Kresser. My wife and I have been paleo for over a year and a half now, and are convinced that both of us have reactions to gluten. They present quite differently, though. For Danica, any significant amount of gluten causes stomach distress now. Before going strict paleo, though, she didn't notice any obvious issue with the protein. For me, I can have it occasionally without major issue. Before going strict paleo, however, I was getting regular headaches that would last days and various "I feel like crap" days. N=1 elimination experiments convinced me that it was sugar, alcohol, or meds causing the headaches. As soon as I cut gluten out of my diet, though, no headaches.I think our experiences indicate two things: first, there are potential reactions that a person can have to gluten that build up over a long period of time, but after that damage is resolved, minor amounts don't revert to symptoms. The second is that some people can develop a "tolerance" to gluten that you can lose if you eliminate it from your diet completely for a period of time. I'd recommend that anyone that doesn't feel pretty much in great health should consider doing a Whole 30 type challenge — which includes gluten free eating, among other no-no's — to see if it solves the problem. http://chriskresser.com/50-shades-of-gluten-intolerance
